Good Eats: Flatbread Company

A few years ago one of my chef friends invited me to dinner at “Flatbreads.” I had’t been before and I asked my friend if she wanted to go with me to try this pizza place. She said “I don’t really feel like eating pizza.” Honestly, I will never forget those words. How could someone not want to eat pizza? Pizza is literally my favorite food! In fact, I tried to make myself sick of eating pizza by eating pizza everyday for two weeks and I still loved every moment.

Anyway, back to the story at hand — Flatbread Company is a casual pizza joint located in the vibrant town of Paia. The ambiance is down-to-earth yet has some surf culture appeal with a bit of a pub vibe. Essentially a franchise company, the premise of this restaurant on Hana Highway is to utilize the freshest ingredients from local farmers, local producers, the local community and serve organic food. With locations from Georgetown to Portland and Paia, the menu consists of locally grown and harvested salads and wood-fired clay oven flatbread pizzas. Because of the focus on clean food meats are chemical free, free-range and organic vegan/vegetarian options abound.

The moment you enter the restaurant you can see the open oven and the pizzas are popping out one by one. They are served hot and fresh.
Sourced locally the ingredients are farm to table: herbs, greens, lettuce, tomatoes, asparagus, carrots, beets, eggplant, beef and more are all from Maui.
The drinks are great too. Craft cocktails and brews are available from the bar and served to your table. (Moscow Mule pictured).
You can also order fresh squeezed lemonade, organic all-natural juices, Maui tea and coffee. (Pictured pomegranate mojito).
A hearty fresh organic salad sourced from local farmers and tossed in a homemade Maui Pineapple Vinaigrette. $8.25
The wood-fire clay oven is a sight to see. All the flatbreads are made in here, given a little spin, then pulled out and sliced and diced. Price range $12.75 (12 inch) to $22.50 (16 inch).
Cut into long strips (or elongated rectangles) this pizza is delicious. You can try the organic flatbread without tomato sauce, with tomato sauce or without any boundaries and just loaded.

My favorite pizza/flatbread here is the Mopsy’s Kalua Pork, you can also order it with free-range chicken. Also, if you don’t want to commit to just one order you can also get the pizza made with half of one topping and the other half with other toppings. What I love about this is the crust is thin and crispy, the Mopsy has a sweet yet tangy organic mango BBQ sauce, red onions, Maui pineapple and Maui goat cheese. The combination of flavors and textures is to die for! The rich smokiness from the kalua pork, with the acid from the pineapple and the creaminess of the goat cheese make this pizza one of the best I’ve ever eaten. Topping it with chicken may be a bit healthier, but I found it to be a bit dry and not as flavorful. “Wanna go to Flatbreads? Oh yeah!”

When on Maui you must try Flatbread Company for their fresh, organic and delicious food — but also for the Good Eats PIZZA!
