Oodles of Noodles at Star Noodle

Just in time for summer, Star Noodle’s Executive Chef Abby Ferrer has created some mouthwatering new noodle dishes. The New York native who has crafted cuisine for Morimoto in both Miami and Maui, brings her Filipino heritage to the forefront with highlights of Southeast Asia and Maui’s iconic blend of local favorites.

Fresh house made noodles are the name of the game when venturing to the popular Lahaina eatery. First-up the Hoaloha Taro Dumplings which are vegetarian and wrapped in a chewy yet delicate freshly made dumpling wrapper. The dense locally grown taro is accentuated with a flavorful sesame puree and accented by a chili-vinaigrette. These are surprisingly filling and delightfully delicious.

A play on the classic Mentaiko pasta, the Mentaiko Udon Noodles are decadently chewy, buttery and melt in your mouth. Served with spicy cod roe, crisp pork belly and scallions the use of fresh udon noodles is an inspired take on the Japanese fusion dish. The sauce is creamy, buttery and salty all in one.


A daily special that had us craving more was the Thai-Style Chicken Curry. Perfectly cooked chicken atop noodles served in a spicy curry broth and topped with crispy noodles, this was an elegant dish that was also reminiscent of local street food in Bangkok. The flavors of curry, spice, sour, sweet and crunchy all danced together perfectly. Not on the menu, but it should be!

The standout dish of the day is the new Ika Mazemen. Served chilled and perfect for a hot summer day or night. This combination of fresh squid ink noodles topped with blue crab, yuzu kosho, ikura and taro bacon puree was an outstanding, refreshing and invigorating treat. We could not stop eating it.

All the ramen, saimin and udon noodles are made fresh everyday. You’ll surely delight and savor these combinations of textures, flavors and robust delicious dishes.
